Stuffed Bell Peppers

Ingredients:
6 large bell peppers
1 tablespoon vegetable oil
1 small zucchini, finely chopped
2 cloves garlic, minced
1 tablespoon freshly squeezed lemon juice
2 cups cooked couscous
1 can (15 ounces) garbanzo beans, drained and rinsed
1 ripe tomato, seeded and finely chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup crumbled feta cheese
Steps:
Slice the tops of the peppers off to make lids. Scoop out the membrane and seeds of the pepper and discard. In a large saucepan of lightly salted boiling water, simmer the peppers and lids for 5 minutes. Drain.
preheat the oven to 350 degrees F
Heat the oil in a saucepan over medium heat. Add the zucchini and garlic. Cook for 2 minutes. Stir in the lemon juice. Cook for one minute and remove from heat. Stir in the garbanzo beans , couscous, tomato, oregano, salt, and pepper. Stir in the cheese.
Fill each pepper with couscous mixture. Place the filled peppers in a shallow baking dish and cover with the pepper tops.
Bake for around 20 minutes until the filling is heated through.
Optional to add hot sauce on top!
